Courgette and Sun-Dried Tomato Muffins Recipe
Ingredients: Makes 12 muffins
- oil for greasing
- 3 cups grated courgette
- Sun-dried tomatoes, rinsed if in oil
- 1 medium clove garlic
- 1 cup pumpkin seeds
- 4 eggs
- 4 heaped tablespoons of flaxseed meal
- ¼ cup flour
- ¼ tsp baking powder
Method:
- Preheat the oven to moderate 180C, (gas 4, 350F)
- Grease a muffin tray (6 casings) with a little oil.
- Using your hands, squeeze the grated courgette to remove as much of the juice as possible. Add the flesh to a mixing bowl.
- Add sun-dried tomatoes, garlic and pumpkin seeds to a food processor. Process until ground and incorporated. Transfer to the bowl with the grated courgette
- Add eggs, flaxseed meal, flour and baking powder to the mix, and mix well.
- Divide the mixture between muffin casings and place in the oven, middle shelf.
- Bake for 30-35 minutes. Remove and set aside to cool completely before removing from the tray.
These muffins can be stored in an air-tight container in the fridge for 3-4 days.
Mackerel Fish Pie Recipe
Ingredients:
- Cooked Mackerel Fillets (de-boned and flaked)
- Peas
- Sweetcorn
- Potatoes & Carrots – peeled and chopped
- Cheese – enough to grate and cover the oven-proof dish
- Milk
- 4 tsp cornflour to thicken the sauce
Method:
- In one pan pour in enough milk to make a sauce and simmer gently (do not boil)
- In another pan add the potatoes and carrots and bring to a boil, then reduce to a simmer until soft enough to mash
- Add the peas and sweetcorn to the oven-dish (can go in frozen as going in the oven)
- Add the flaked mackerel to the oven-dish
- Mash the potatoes and carrots together
- Go back to the milk pan, stir in half the grated cheese and cornflour and stir continually until you have a cheese sauce
- Add the cheese sauce to the oven dish, cover with the mashed potato and carrots and then the grated cheese.
- Transfer to the oven for 30 mins at 190C/170C fan/375F/gas 5
The above fish pie is a cheaper version of a traditional fish pie with salmon, haddock and cod yet packs a nutritional punch.
